When you can’t decide whether the view of the plate or the technology next door is more fascinating. When you build communicative bridges with a view of the pond. When you don’t have to look at the menu at all because you want to have exactly the dish that has just been carried past your table. When your table neighbors are your friends at the end of the evening. Then you have arrived at Schattbuch.

Special concepts emerge when you think outside the box. This is how a combination of technology and enjoyment was created in the Amtzell industrial area that is possibly unique in this form: the Schattbuch restaurant. A Michelin-starred restaurant in the halls of an automation company.

As unconventional as the Schattbuch is the vision from which the restaurant hung. The owner and visionary Hermann Müller recognized the daily need for customer hospitality at his industrial company fpt robotics. At the same time, the workforce grew. In 2009, the public restaurant and event house “akademie.amtzell” was created as part of fpt robotics. A few years later, the academy became the Schattbuch and made a name for itself far beyond the borders of Upper Swabia. The restaurant testers of the Michelin Guide also found that the concept works, awarding the Schattbuch a star for the first time in December 2016.

As a Michelin-starred restaurant in the heart of the Allgäu, it is our aim to reconcile enjoyment and responsibility. For us, sustainability means using natural resources consciously, strengthening regional cycles and making a contribution to the preservation of the environment, animal welfare and biodiversity with every dish. Our commitment ranges from the conscious selection of ingredients to fair partnerships, climate-friendly processes and respectful cooperation within the team. This is how we live sustainability at Schattbuch – day after day, plate by plate.
